Miso Master Organic Traditional Red Miso paste is our best-selling miso. Aging naturally for 12 months in Cypress, Redwood, or Fir barrels to give it a sweeter, lighter taste than other long-term varieties. The high soybean content needs four full seasons to ferment due a high protein and fat content. Get the maximum benefits and flavor with our traditional organic red miso paste. This longer aging period gives the aspergillus spores and lactobacillus bacteria sufficient time to completely break down the complex protein and fat molecules into more digestible constituents.
