Asian Flavors Tofu Salad

1. Weigh down tofu with plate for 30 minutes to release excess moisture. Blot with towels. Crumble tofu with hands into large bowl.
2. Combine miso with pickled ginger, ginger juice, tahini, and toasted sesame oil. Add miso mixture to crumbled tofu and combine thoroughly.
3. Stir in celery, scallions, and sprouts. Spread on toasted whole grain bread or stuff into tortilla with lettuce and carrots.
