- Make small incision around equator of apple to prevent bursting. Create a cavity with melon baller or spoon, leaving bottom of apple intact.
- Combine miso, grain coffee, nut/seed butter, and rice syrup, and enough water to make a paste. Add walnuts, raisins, cinnamon, and vanilla.
- Stuff apples with the mixture. Place in baking dish with enough water and any remaining stuffing mixture to cover bottom.
- Cover and bake at 350° for 25 minutes or until a toothpick is easily removed.
