Sweet and Sour Sauce

Yield About 1½ Cups

This delicious Sweet and Sour Sauce, features two of our Emperor's Kitchen favorites, Emperor's Kitchen Organic Kuzu, Emperor's Kitchen Organic Pureed Ginger and sweetened with our Sweet Cloud Organic Brown Rice Syrup. It's fast and easy, and is the perfect blend of flavors. Enjoy it over veggies with rice or noodles for that extra zing!

Slowly add pineapple juice to kuzu, breaking up any lumps in the kuzu until dissolved. Add the remaining ingredients, whisk until well blended, and heat in saucepan over medium-low heat until thickened.

Emperor’s Kitchen Organic Kuzu

Emperor’s Kitchen Organic Kuzu is harvested and processed in the labor-intensive traditional way, which takes place beginning in December when the roots are swollen with starch. The roots are dug by hand, the starch is separated from the fibrous roots by repeated washing and straining, and the resulting mash is air-dried for sixty days. In a good year, the roots will have only 13% extractable starch. Kuzu is used much like cornstarch or arrowroot to thicken gravies and sauces, naturally.

Apricot Pudding or Tarts

This tasty Apricot Pudding is sweetened with apple juice and thickened with our Emperor’s Kitchen Organic Authentic Kuzu. You can also use this recipe to make Apricot Tarts, yum!

Apricot Pudding or Tarts

Yield 3 cups

Ingredients

Instructions

  1. Combine apricots, water, and 1 cup of the apple juice in a saucepan. Bring to a boil, lower heat, and simmer, covered, about 20 minutes.
  2. Remove from heat and pour the liquid remaining in the pot into a measuring cup and add enough apple juice to equal 2½ cups fruit juice.
  3. Place the cooked fruit, fruit juice, and tahini in a blender and puree.
  4. Return to pot and add the salt and lemon juice.
  5. Dissolve the kuzu in 3 Tbsp cold water, add to pot, and bring to a simmer over medium heat while stirring constantly. Simmer over low heat for 1-2 minutes, then pour into custard cups or prebaked and cooled tart shells.

DIRECTIONS

  1. Cook noodles in large pot of boiling water until just tender but still firm to bite, stirring occasionally. Drain. Transfer to bowl. Add 2 teaspoons sesame oil to noodles and toss to coat.
  2. Mix vinegar, cilantro, ginger, jalapeños and honey in small bowl and set aside.
  3. Heat remaining 2 teaspoons sesame oil in heavy large skillet over medium-high heat. Add green onions and garlic; sauté until aromatic, about 3 minutes.
  4. Season shrimp with salt and pepper. Add vinegar mixture and shrimp to skillet; stir until shrimp are just cooked through, about 3 minutes.
  5. Dissolve kuzu in 1/2 cup water. Add mixture to skillet; stir until liquid thickens, about 2 minutes.
  6. Mound noodles on platter. Arrange shrimp over noodles and serve.

Instructions

  1. Dissolve kuzu in 1 Tbsp water until smooth, cream in miso and slowly add ½ cup filtered water, stirring until well mixed. Set aside.
  2. Heat oil in skillet and sauté onions until lightly browned. Add garlic and sauté 30 or more seconds.
  3. On medium heat, add the kuzu-miso mix and stir constantly until thickened.
  4. Serve with rice, grains, mashed potatoes or your favorite vegetables.
