Sweet & Spicy Peanut Miso Soup

Description

Peanuts and Miso are two flavors that compliment each other very nicely.  This recipe is so versatile and the leftovers can be frozen (if you have any) and used anytime.  Try making this using our recipe for Tempeh Broth!  Make a double batch, you won’t regret it. (Shown here with Vegan Tempeh Meatless Miso-Balls, Roasted Cilantro Lime Cauliflower.)


Ingredients

6 cups vegetable broth, Tempeh Broth (recipe link), or other light broth base

1/4 cup Mellow White or Sweet White Miso

6 tablespoons Tahini Paste

4 tablespoons Creamy Peanut Butter (salter or unsalted)

1 cup Brown Rice Malt Syrup (or Brown Rice Syrup, Honey, 1/2 cup Maple Syrup or 1/2 cup Agave)

1/4 cup Mirin

2 tablespoon chopped or pureed garlic

1 1/2 tablespoons pureed ginger

1/2 teaspoon cayenne pepper (added at the end to taste)

Shredded Coconut (optional)


Instructions

  1. Put the broth you have selected into a large soup pot and bring to a low boil making sure it is well combined if using a bouillon or other base to make stock.  Turn off the heat and remove 1 cup of the stock and set aside.  
  2. Combine all ingredients (except 1 cup stock & cayenne pepper) in a large mixing bowl.  Whisk to combine.
  3. Add 1/2 cup of warm (heat up again if needed) to the well combined peanut miso base.
  4. Add peanut miso base to soup pot with stock.
  5. Use remaining 1/2 cup warm stock liquid to “clean” the mixing bowl and get all the remaining peanut base into the soup pot with your other ingredients.  Add 1/2 teaspoon cayenne pepper.
  6. Bring to a low boil.
  7. Simmer for 15-20 minutes uncovered, stirring occasionally.
  8. Taste soup and adjust spices, add more cayenne and salt if needed.
  9. If the soup lacks depth of flavor continue to simmer until desired flavor is reached.
  10. Top with shredded coconut (optional)

Notes

Pro Tips:

  1.  Soup flavor “develops” after sitting for 24 hours, so make it a day ahead and taste and adjust when you reheat it for serving the next day.
  2. Pour the cooled leftovers into an ice cube tray or two to save and serve another time.  
  3. Add silken tofu to this recipe and make a sauce or dip.

Description

Enjoy this tasty twist to a buttery spread made with our Miso Master Organic Mellow White, Sweet White or Traditional Red Miso. Our Miso Master Organic Sweet White and Mellow White Miso are lower in sodium and lighter in flavor and works great for Miso Butter on whole grain toast. Our longer aged Traditional Red Miso would be tasty for a Miso Butter flavoring tofu salad or thinned for a sauce.

  1. Cream the first 2 ingredients together. 
  2. Mix in the remaining 3 ingredients for a fantastic topping on grilled tofu, tempeh, fish or chicken. This also makes a flavorful baked potato filling.
  3. For a yummy sauce over vegetables, thin with water or vegetable stock to desired consistency. Toss over steamed broccoli, grilled zucchini or yellow squash, sautéed greens, or green beans.
  4. Garnish with chopped parsley.

Grilled Sweet Corn

Fire up the grill and grill up some tasty Sweet Corn and serve with a spread of our delicious, umami-flavored Miso Master Miso Butter!

Grilling Sweet Corn

  1. Pull back husks and remove corn silk. Fold husks back up around corn.
  2. Place corn in husks on grill and cook about 15-20 minutes, turning every 5 minutes to cook corn evenly.
  3. Remove from grill, remove husks and brush lightly with Miso Master Organic Miso Butter while still hot. YUM

Organic Miso Butter 

  1. Cream the Miso Master Miso of your choice together with the unsalted butter of your choice.
  2. Brush on grilled sweet corn. Store leftover miso butter in refrigerator and use within 1 week.

VARIATION:
Soak silk-cleaned husks of corn in cold water for about 10 minutes before grilling. This will fill some of the husks with water that will steam the corn during grilling OR remove husks completely and cook sweet corn directly on grill.

Emperor’s Kitchen Organic Kuzu is harvested and processed in the labor-intensive traditional way, which takes place beginning in December when the roots are swollen with starch. The roots are dug by hand, the starch is separated from the fibrous roots by repeated washing and straining, and the resulting mash is air-dried for sixty days. In a good year, the roots will have only 13% extractable starch. Kuzu is used much like cornstarch or arrowroot to thicken gravies and sauces, naturally.
