Kyoto-Style Miso Soup

Enjoy this tasty miso soup seasoned with our delicious Miso Master Organic, Low-Sodium Sweet White Miso

Ingredients

Instructions

  1. Place kombu into pot with the water. Cook over medium heat, uncovered, and remove kombu just as water comes to a boil.  
  2. Stir fish flakes into boiling water and remove from heat. Let stand for 2 minutes. Strain the broth, pressing all liquid from flakes and return pot to heat.  
  3. Add tofu and shiitake mushrooms and simmer for 5 to 7 minutes. Remove from heat and add scallions.
  4. Dilute the miso in some of the broth, add to the soup, and allow to sit a couple of minutes before serving.  

Notes

When preparing miso soup, avoid boiling the soup after the miso has been added, since extreme heat destroys the delicate enzymes.

Shiitake-Udon Broth

This delicious soup made with Organic Planet Organic Udon, Emperor's Kitchen Organic Shiitake Mushrooms and Organic Toasted Sesame Oil, and seasoned with Miso Master Organic Mellow White Miso, is packed with flavor and is sure to warm the coldest day.

Instructions

  1. Soak shiitakes ½-1 hr. in 2 cups water. Remove, discard stems, and slice. Return to soaking water, add wakame and tofu pieces, and bring to a full boil.
  2. Add Organic Planet Organic Udon and cook, uncovered, for 5-6 minutes, or until tender. Remove from heat, dissolve miso in 4 Tbsp warm water, and add to pasta, Top with soy sauce and toasted sesame oil, stir, and serve.

  1. Bring water and kombu to a boil and then remove kombu (you may save kombu for another use). Add scallion to stock, then carrots, and simmer about 10 minutes. Add greens and simmer, uncovered for 5 to 10 minutes. Turn off heat.
  2. Dilute miso in some of the broth, add to soup, and allow to sit a few minutes before serving.  
  3. Other vegetable combinations such as potato-leek-wakame, or shiitake mushrooms-turnips-greens may be substituted.

Onion Soup

Our Emperor’s Kitchen Organic Shiitake Mushrooms add the perfect touch to this tasty onion soup.

Instructions

  1. Soak kombu and shiitake in the water for 30-60 minutes. Bring to a simmer, uncovered, over medium heat. Remove kombu and shiitake (reserving for another use) and set aside.
  2. Slice onions thinly in half moons. Heat oil in medium-sized skillet; add onions and a pinch of salt and sauté over medium-low heat until translucent. Lower heat, add kombu/shiitake soaking water, cover, and cook 15-20 minutes.
  3. Add remaining salt and bay leaf, and simmer 15 minutes.
  4. Add soy sauce and celery seeds, simmering 5 minutes more.
  5. Garnish with minced parsley and croutons and serve hot.
