Description

This light and tasty udon salad features our Organic Planet Traditional Whole Wheat Udon noodles tossed with a delicious dressing made with our Miso Master Organic Mellow White Miso.

Instructions

1. Prepare noodles according to package directions, drain, and set aside.

2. While noodles are cooking, lightly steam the broccoli or green beans until just tender and still bright green.

3. Peel the cucumber and quarter lengthwise, then thinly slice.

4. Combine the miso, vinegar, and water to make the dressing.

5. Chop noodles into 2” lengths and toss them with the vegetables. Add dressing and mix well.

6. Garnish with minced scallion, serve and enjoy.

Description

This delicious soup made with Organic Planet Organic Udon, Emperor’s Kitchen Organic Shiitake Mushrooms and Organic Toasted Sesame Oil, and seasoned with Miso Master Organic Mellow White Miso, is packed with flavor and is sure to warm the coldest day.



Instructions

  1. Soak shiitakes ½-1 hr. in 2 cups water. Remove, discard stems, and slice. Return to soaking water, add wakame and tofu pieces, and bring to a full boil.
  2. Add Organic Planet Organic Udon and cook, uncovered, for 5-6 minutes, or until tender. Remove from heat, dissolve miso in 4 Tbsp warm water, and add to pasta, Top with soy sauce and toasted sesame oil, stir, and serve.

Miso-Tahini Avocado Toast with Black Sesame Gomashio

Ingredients

BLACK SESAME GOMASIO 

TOAST 

  • 1/4 cup tahini paste
  • 1 tablespoon mellow white miso 
  • 1 small garlic clove, minced
  • 1/2 teaspoon fresh lemon juice
  • 34 tablespoons water
  • splash of tamari (optional)
  • 1 ripe avocado, pitted and cut into 4 segments
  • 4 slices of toast, toasted
  • 12 tablespoons black sesame gomasio 
  • 2 scallions, trimmed and sliced thin
  • fresh chopped dill, to top (optional)

Instructions

  1. In a heavy skillet over a low flame, toast sesame seeds until fragrant, about 2-3 minutes.  set aside and let cool.  Place salt and cooled seeds in a mortar and pestle, grind until sandy.  Set aside until ready to use
  2. In a small mixing bowl, whisk tahini, miso, lemon juice, and garlic; while whisking add water 1 tablespoon at a time until thick and creamy (slightly thicker than a traditional tahini sauce).  Cover with plastic wrap and refrigerate until ready to use.
  3.  Take the avocado segments and slice each segment into thin slices.  Spread a generous amount of miso-tahini onto each piece of toast; top with sliced avocado and sprinkle with gomasio, sliced scallions, and chopped dill and enjoy!

Notes

The gomasio makes more than you will need here, so store in a lidded jar at room temp for up to 5-6 months. Sprinkle it on green salads, grain salads, roasted vegetables etc., etc. likewise, the miso-tahini makes about 1/3 cup and you will likely have leftovers which you can cover and refrigerate for 1-2 weeks.

  • 1/2 cup almond butter
  • 1/4 cup warm water
  • 1/4 cup onion, chopped
  • 34 Tbsp olive oil
  • 2 garlic cloves, chopped
  • 1 Tbsp Miso Master Organic Mellow White Miso 
  • 1 Tbsp nutritional yeast
  • 1 Tbsp chopped fresh oregano
  • 1 Tbsp chopped fresh thyme
  • 2 tsp cider vinegar
  • 2 tsp Miso Master Organic Miso Tamari 
  • 1/4 tsp turmeric
  • 1/4 tsp crushed red pepper
  • 1 and 1/2 pounds curly kale leaves, stem discarded
  • to taste sea salt

 


Instructions

  1. Preheat the oven to 200 degrees and position racks evenly spaced apart. Puree all the ingredients except the kale and salt. Break kale leaves into potatoe chip sizes.
  2. Grease baking sheets with olive oil and divide the kale leaves among them. Drizzle the pureed mixture over the kale and rub each leaf to season evenly. 
  3. Arrange the kale on the sheets and season with salt. Bake for 1 hour and 40 minutes, until crisp.  Let cool, lift with a spatula, and serve to rave reviews!
