Chef Tom's Miso Dressing

Yield Cups

Organic Chef Tom's Miso Dressing has been a favorite for the past 27 years. It’s super simple to prepare and simply delicious. Enjoy on your favorite fresh organic garden salads, whole grain and veggie dishes and bean or tofu salads!

Instructions

Blend all ingredients in blender or food processor until creamy smooth. Store in glass jar in refrigerator.

Chef Tom has been cooking natural foods for over 39 years. He cooked in natural restaurants across the USA, including the East West Cookery in New York City, 7th Inn in Boston, The Unicorn in Miami and his own restaurant The Garden Cookery in Maine before moving his family to the beautiful city of Asheville, North Carolina.

Kyoto-Style Miso Soup

Yield 4 Servings

Enjoy this tasty miso soup seasoned with our delicious Miso Master Organic, Low-Sodium Sweet White Miso

Ingredients

Instructions

  1. Place kombu into pot with the water. Cook over medium heat, uncovered, and remove kombu just as water comes to a boil.  
  2. Stir fish flakes into boiling water and remove from heat. Let stand for 2 minutes. Strain the broth, pressing all liquid from flakes and return pot to heat.  
  3. Add tofu and shiitake mushrooms and simmer for 5 to 7 minutes. Remove from heat and add scallions.
  4. Dilute the miso in some of the broth, add to the soup, and allow to sit a couple of minutes before serving.  

Notes

When preparing miso soup, avoid boiling the soup after the miso has been added, since extreme heat destroys the delicate enzymes.

Garlic Noodles with Miso Butter

Yield 4-6 servings

We love this delicious noodles recipe from Yummly.com! Try it with our Organic Planet Organic Whole Wheat Udon and our MIso Master Organic Sweet White Miso.

Ingredients

Instructions

Cook the pasta according to package directions. Drain and set aside.

Heat a wok or large sauté pan over medium heat. When hot, add the butter, garlic and green onion. Cook for 1 minute or until very fragrant, making sure to keep an eye on the heat so that the garlic does not burn. Add in the mushrooms and cook for 2 minutes.

Remove from heat, add in the miso, oyster sauce and stir.

Add in the cooked pasta, toss well and serve.

Creamy Miso Dressing*

Yield 2-4 servings

Miso Master Organic Sweet White Miso adds the perfect touch to this creamy salad dressing, making it the ideal dressing for your favorite salad.

Ingredients

Instructions

  1. Make the dressing by smashing the garlic into a paste in a mortar and pestle (or alternately, with a knife).
  2. Stir in the miso, then add the mirin, and vinegar, and combine until it all comes together.
  3. Add the cumin and the yogurt, and stir again before finishing with the heavy cream.
  4. Taste, and adjust the dressing if needed.
