Miso Corn Salsa

Description

Bring on the party with a unique twist in the classic salsa with a touch of umami taste with the addition of our soy-free Miso Master Organic Chickpea Miso! Serve with corn chips, burritos, or any Mexican dish and enjoy.


Ingredients

Scale
  • ¾ cup whole kernel corn, drained
  • ½ cup red bell pepper, chopped
  • ½ cup green bell pepper, chopped
  • ¼ cup scallions, cut into ½” lengths
  • ¾ cup chopped tomato
  • 1 Tbsp minced jalapeno pepper
  • ¼ cup  Miso Master Organic Chickpea Miso
  • ¼ cup reserved corn liquid (optional)
  • 1 Tbsp lime juice
  • 1 Tbsp extra virgin olive oil
  • 1/8 tsp black pepper
  • ¼ tsp cumin
  • 1 ½ tsp chili powder
  • 1 ½ tsp chopped fresh cilantro

Instructions

  1. In a bowl, mix lightly all the vegetables (the first 5 ingredients). Dissolve miso in reserved corn liquid and add to vegetables.
  2. In a separate bowl mix the lime juice, olive oil, herbs and seasonings. Add to the vegetables.
  3. Chill and serve.

Miso Corn Chowder

Description

Enjoy this tasty Miso Corn Chowder seasoned with our unique soy-free Miso Master Chickpea Miso. It’s creamy and delicious!


Ingredients

Scale
  • 1 onion, chopped
  • 12 cloves garlic, minced
  • 4 tbsp olive oil
  • 4 tbsp whole wheat flour
  • 3 tbsp Miso Master Organic Chickpea Miso  
  • 2½ cups water
  • 1 can whole kernel corn, drained
  • 1 can cream corn
  • 1 small red bell pepper, chopped
  • 12 tbsp shoyu or soy sauce
  • ½ tsp black pepper

Instructions

  1. Sauté the onion and garlic in olive oil until tender. Add flour and cook 5 minutes.
  2. Dissolve miso in 2½ cups spring water. Add dissolved miso to flour mixture, stirring until smooth.
  3. Next, add whole corn, cream corn, red pepper, and shoyu to flour mixture. Simmer 10 minutes, add ½ tsp black pepper, and serve.

  2. Stir in mustard, and then slowly add water, stirring until well mixed.

Ingredients

Scale
  • 12 cloves garlic, peeled
  • 1 cup fresh tofu, drained
  • 1 cup refried beans
  • ¼ cup Miso Master Organic Chickpea Miso  
  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp brown rice vinegar
  • 1 Tbsp chili powder
  • 1 tsp cumin
  • ¼ tsp cayenne powder
  • ½ cup whole kernel corn, drained
  • ½ cup black beans, rinsed and drained
  • ½ cup red and green bell pepper, chopped

Instructions

  1. In a food processor, chop garlic and add tofu, refried beans, miso, olive oil, vinegar, and spices. Blend thoroughly.
  2. Add remaining ingredients (corn, beans, and peppers) and mix briefly for 5 seconds.
  3. Place in serving bowl and serve with chips, crackers, or pita bread pieces.
