Ingredients

  • 1 onion, chopped
  • 12 cloves garlic, minced
  • 4 tbsp olive oil
  • 4 tbsp whole wheat flour
  • 3 tbsp Miso Master Organic Chickpea Miso
  • 2½ cups water
  • 1 can whole kernel corn, drained
  • 1 can cream corn
  • 1 small red bell pepper, chopped
  • 12 tbsp shoyu or soy sauce
  • ½ tsp black pepper

Instructions

  1. Sauté the onion and garlic in olive oil until tender. Add flour and cook 5 minutes.
  2. Dissolve miso in 2½ cups spring water. Add dissolved miso to flour mixture, stirring until smooth.
  3. Next, add whole corn, cream corn, red pepper, and shoyu to flour mixture. Simmer 10 minutes, add ½ tsp black pepper, and serve.

Tofu Steak with Miso and Ginger*

This ginger-rich recipe turns ordinary tofu steaks from uninspiring into something you will crave.

Ingredients

  • 114 oz block extra firm tofu
  • 1 tbsp Miso Master Organic Chickpea Miso
  • 6 tbsp warm water
  • 3 tbsp finely grated ginger
  • 12 tbsp vegetable oil
  • 1 tsp sesame seeds
  • 1/2 tbsp scallions, sliced thinly

Instructions

  1. Drain and rinse tofu. Cut into 6 slices. Place tofu slices between clean kitchen towels (or paper towels) on a dish or cutting board. Gently press to remove excess water.
  2. In a small bowl, mix together miso, water, and ginger.
  3. Heat a little vegetable oil in a skillet. Fry tofu until golden on both sides. Reduce heat to low.
  4. Pour miso mixture over and between tofu slices and cook until sizzling.
  5. Just before serving, garnish with scallions and sesame seeds.

Ingredients

  • 12 cloves garlic, peeled
  • 1 cup fresh tofu, drained
  • 1 cup refried beans
  • ¼ cup Miso Master Organic Chickpea Miso  
  • 2 Tbsp extra virgin olive oil
  • 2 Tbsp brown rice vinegar
  • 1 Tbsp chili powder
  • 1 tsp cumin
  • ¼ tsp cayenne powder
  • ½ cup whole kernel corn, drained
  • ½ cup black beans, rinsed and drained
  • ½ cup red and green bell pepper, chopped

Instructions

  1. In a food processor, chop garlic and add tofu, refried beans, miso, olive oil, vinegar, and spices. Blend thoroughly.
  2. Add remaining ingredients (corn, beans, and peppers) and mix briefly for 5 seconds.
  3. Place in serving bowl and serve with chips, crackers, or pita bread pieces.
