Instructions

  1. Mix all ingredients until well blended.
  2. Marinate chicken or pork for up to 12 hours.
  3. Brush on fish 2-4 hours before cooking. 

Notes

Marinade is sufficient for 5 pounds of chicken, pork, or fish.

For a sauce, dilute 2 parts marinade with 1 part water, stock or vermouth.

Hearty Yeast Gravy

Description

Enjoy this delicious yeast gravy over grains, mashed potatoes, and vegetables. Made with our Miso Master Organic Mellow White Miso, this gravy soothes the soul!


Ingredients

Scale
  • 1½ Tbsp organic olive oil
  • 1 onion, chopped
  • 12 cloves garlic, minced
  • 3 Tbsp whole wheat flour
  • 3 Tbsp nutritional yeast
  • 1¾ cups water
  • 34 Tbsp Miso Master Organic Mellow White Miso
  • ¼ tsp dried basil
  • several sprigs chopped Parsley

Instructions

  1. Heat oil and sauté onion and garlic 3-5 minutes on medium heat. Lower heat and add flour and yeast. Stir constantly 1-2 minutes, then slowly add 1½ cups water while stirring briskly to avoid lumping.
  2. Soften miso in remaining ¼ cup water and add, along with basil and parsley.
  3. Simmer, uncovered, about 15 minutes, stirring occasionally as gravy thickens.

Cream of Mushroom Miso Soup

Ingredients

Scale
  • 4 Tbsp butter
  • ½ cup extra virgin olive oil
  • 1 cup onion, chopped
  • 1 Tbsp garlic, minced
  • 3 cups mushrooms, sliced
  • 6 Tbsp flour
  • 2 cups milk
  • 1 cup half and half
  • 6 Tbsp Miso Master Organic Mellow White Miso
  • ¼ cup water
  • ¼ cup Sherry
  • 1 Tbsp soy sauce

Instructions

  1. Sauté onions and garlic in butter and olive oil until tender. Add mushrooms and cook until tender.
  2. Stir in the flour and cook 5 minutes.
  3. Slowly add the 2 cups of water, milk and half and half, stirring constantly, and heat thoroughly.
  4. Soften miso with 1/4 cup of water and add to soup.
  5. Add remaining ingredients and serve.

Ingredients

Scale
  • 1 cup onions, chopped
  • 2 Tbsp garlic, minced
  • ¼ cup olive oil
  • 3 Tbsp all purpose flour
  • 8 cups water
  • 2 cups lentils
  • 3 Tbsp soy sauce
  • 4 Tbsp chili powder
  • 1 tsp thyme
  • 1 cup diced carrots
  • 1 cup diced celery
  • ½ tsp black pepper
  • 1/3 cup Miso Master Organic Country Barley Miso
  • 1/3 cup filtered water

Instructions

  1. Sauté onions and garlic in olive oil until tender.
  2. Add flour stir and cook for 5 minutes.
  3. Add the remaining ingredients except for the miso and the 1/3 cup of water.t
  4. Cook until lentils are tender.
  5. Dissolve miso with 1/3 cup of water, add to soup and serve.

 

Notes

Note: For a creamier soup, blend thoroughly in a food processor.
