MISO MASTER ORGANIC MISO VARIETIES AND USES

Miso Master Organic misos come in two categories: Short-Term and Long-Term. The Short-Term misos (Mellow White, Sweet White, Chickpea) are aged for 15 - 30 days and are light in color, slightly sweet, and nutty in flavor. They are perfect for sauces, dips, salad dressings, spreads, and desserts. These misos are higher in simple sugars and probiotic bacteria than long-Term misos, and lower in sodium content. The Long-Term misos (Brown Rice, Country Barley, Traditional Red) are used in heartier soups, rubs, glazes, stews, and marinades, to name a few. They are higher in protein, essential fatty acids, isoflavones, and antioxidants than Short-Term misos. Fermented for 1 – 2 years, they are darker in color and have a hearty, salty, robust flavor.
