Miso Marinade

Yield 1 Quart


  • 1-1½ cups Miso Master Organic Traditional Red Miso
  • 1 cup soy sauce
  • 1-1½ cups packed brown sugar
  • 1 cup dry vermouth
  • 1 Tbsp finely grated fresh ginger
  • 2 large cloves garlic, minced


  1. Mix all ingredients until well blended.
  2. Marinate chicken or pork for up to 12 hours.
  3. Brush on fish 2-4 hours before cooking. 


Marinade is sufficient for 5 pounds of chicken, pork, or fish.

For a sauce, dilute 2 parts marinade with 1 part water, stock or vermouth.
