Experience the unique position of Miso Master Organic Mellow White (Shiro) Miso paste. Mellow White Miso is a short-term miso which means that it ferments for less time (15 days to 1 year) and is made with more rice koji and less salt.  The result is a light golden color white miso paste with a mild, delicate flavor and a touch of sweetness. 

Miso Master Handcrafted Miso paste has been made in the USA for over 40 years.  We are proud to keep the traditional methods of miso making alive today.  We use traditional, time-honored methods to naturally ferment our miso paste.  No additives, dyes, yeast, animal products, accelerants are used to make our artisan miso paste.  

  • Mellow White Miso is light in color with a mild, sweet and slightly salty flavor
  • Enjoy the flavor of organic miso made with organic soybeans and handmade koji rice, and aged for 30 days to develop a smooth, mellow, umami flavor.
  • Miso Master Mellow White Miso paste is unpasteurized 
  • Mellow white miso is good for 18 about months when refrigerated
  • Use miso paste for soup, or add as an ingredient to stews, glazes, salad dressings, marinades, baked goods and desserts. Enhances savory flavor and adds contrast to sweets and baked goods.

Miso Master Organic Mellow White Miso paste is one of our short-term miso varieties. These misos have their own unique position in the miso universe; in many ways, this position is the mirror opposite of the long-term aged misos. Short-term aged or "mellow" misos have more rice koji (grain inoculated with aspergillus spores) than soybeans in their ingredient mix because they are designed to ferment quickly as the aspergillus mold moves quickly through the abundant starches in rice transforming them into simple sugars. Short-term miso also has much less salt in their ingredient mix, thereby retarding the fermentation process much less than in the long-term aged misos.
