Cut baby red potatoes into quarters or halves and place in large pot. Cover potatoes with water and bring to a boil. Turn the heat down and simmer gently for about 10-15 minutes uncovered. Potatoes should not fall apart and be barely cooked through.
Once the potatoes are done cooking they should be strained and rinsed in cold water to stop further cooking. Allow them to drain in a colander while you prepare the remaining ingredients.
Cook petite peas on the stove or microwave according to package instructions. Rinse in cold water and set aside to drain along with the potatoes.
Make the dressing by adding all the ingredients into a small bowl and whisking until creamy and fully blended.
Pour dressing over cooled potatoes, add peas and toss gently. Place potato salad in the refrigerator to let all the flavors absorb and to finish cooling the potatoes.
Add salt to taste and garnish with sesame seeds if desired.

3 Tbsp organic peanut butter or roasted cashew butter
Juice of one fresh lemon
1 Tbsp cooking sherry
2 tsp ginger juice
1 cloves garlic, minced
¼ – ½ tsp hot sesame oil
1/3 cup water
Instructions
Thoroughly mix the miso and nut butter together.
Combine the remaining ingredients, except water, and slowly stir into the miso-peanut butter mixture.
Place this mixture in a saucepan and slowly bring to a simmer, stirring frequently. Thin with water to desired consistency.
Serve over noodles, rice, vegetables, or as a dip for kebabs.

Sprinkle cucumber with salt, toss, gently knead for 1 minute, and set aside.
Soak wakame in water to cover for 5 minutes. Drain and pat dry with towel. Gently squeeze excess water from cucumbers and place in a bowl with wakame.
Combine brown rice vinegar, mirin, and soy sauce, add to salad, and lightly toss to mix.
Variation
For a more elegant presentation, serve on a bed of lettuce leaves and garnish with thinly sliced red onion or radish and a light sprinkle of toasted sesame seeds.
