Creamy Squash Soup with Coconut Milk

Ingredients

Scale
  • 2 medium leeks
  • 2 tsp canola or sesame oil
  • 3 cups peeled, seeded and cubed butternut or acorn squash
  • ¼ tsp sea salt
  • 2 ½ cups water
  • 14 oz can coconut milk
  • 1/8 to 1/4 tsp to taste black Pepper
  • 1 cinnamon stick
  • 1 tbsp ginger juice
  • 3 tbsp Miso Master Organic Low-Salt Sweet White Miso

Instructions

1. Cut off and discard the root and the dark green fibrous portion of the leeks. Slice the leek lengthwise and wash carefully to remove any soil that may be trapped between the leaves. Cut the leeks into ¼ inch-thick slices and set aside.

2. Heat the oil in a 4-quart pot, add the leeks, squash and salt, and sauté over medium heat for 1 minute to coat the leeks and squash with hot oil.

3. Add the salt, water, and coconut milk and bring it to a boil. Add the pepper and cinnamon and simmer, covered, about 15 minutes, or until the squash is soft.

4. Remove the cinnamon stick and discard.

5. Half fill a blender with some of the soup, add the ginger juice and miso, and blend well. Pour the pureed soup into a large bowl, and continue blending portions until all of it has been pureed. Return the soup to the pot, bring to a simmer, and serve garnished with parsley.

    Mac & Cheese Vegan Style

    Mac & Cheese Vegan Style

    This dairy-free version is none the less rich and satisfying. Vegetables can be added for a type of Pasta Primevara, but be careful not to overcook them, they should be tender-crisp.

    Sauce:

    1-1/2 tablespoons olive oil
    2 cloves garlic, finely minced
    1 small onion, diced
    3 tablespoons unbleached white flour
    1-1/2 cups vegetable stock
    pinch sea salt
    pinch white or black pepper (optional)
    2 tablespoons Miso Master Organic Sweet White Miso
    2 tablespoons tahini
    2 tablespoons finely chopped fresh basil
    1 cup parsley, minced
    1 tablespoon red wine vinegar or lemon juice

    Pasta

    12 ounces macaroni (such as rotelli, ziti, penne, or shells)

    Directions

    Add the oil to a medium-sized frying pan, and sauté the garlic and onion over low heat for 2 minutes, being careful not to brown the garlic. Add the flour and stir constantly for 1 minute. Slowly add the stock, whisking until the sauce thickens somewhat. Add a pinch of salt and, if desired, pepper, and simmer 5 minutes. Add a little more stock as needed, if sauce is too thick.

    In a small bowl combine the miso and tahini, and gradually mix in 1 cup stock or water. Add the mixture to the sauce and simmer very gently for 1 to 2 minutes. For the last minute add the basil, about 3 tablespoons of the parsley (reserve the rest to garnish), and the vinegar or lemon juice.

    Add the noodles to 3 quarts of rapidly boiling, salted water. As soon as the macaroni is cooked, drain it and immediately toss it with the sauce in a large bowl. Serve with a sprinkling of parsley.

    Ingredients

    • 1/2 cup almond butter
    • 1/4 cup warm water
    • 1/4 cup onion, chopped
    • 34 Tbsp olive oil
    • 2 garlic cloves, chopped
    • 1 Tbsp Miso Master Organic Mellow White Miso 
    • 1 Tbsp nutritional yeast
    • 1 Tbsp chopped fresh oregano
    • 1 Tbsp chopped fresh thyme
    • 2 tsp cider vinegar
    • 2 tsp Miso Master Organic Miso Tamari 
    • 1/4 tsp turmeric
    • 1/4 tsp crushed red pepper
    • 1 and 1/2 pounds curly kale leaves, stem discarded
    • to taste sea salt

     

    Instructions

    1. Preheat the oven to 200 degrees and position racks evenly spaced apart. Puree all the ingredients except the kale and salt. Break kale leaves into potatoe chip sizes.
    2. Grease baking sheets with olive oil and divide the kale leaves among them. Drizzle the pureed mixture over the kale and rub each leaf to season evenly. 
    3. Arrange the kale on the sheets and season with salt. Bake for 1 hour and 40 minutes, until crisp.  Let cool, lift with a spatula, and serve to rave reviews!

    Grilled Honey-Miso Wings

    Instructions

    1. Whisk together all of the ingredients except for the chicken wings. Pour the marinade in a zip-lock bag and add in the wings. Seal and toss to coat the wings evenly. Refrigerate for 1 hour or overnight.

    2. Preheat grill to high heat. Add the wings and grill for 5 minutes, flip and turn the heat to low. Cover the grill and let cook for 20 minutes. If using oven, preheat oven to 425F. Cover baking sheet with foil or parchment. Lay the wings on the foil or parchment and bake for 20-25 minutes.
