Brown rice miso paste (Genmai miso) is a traditional type of miso paste made from soybeans and brown rice koji which uses brown rice instead of white rice. Brown rice miso is considered a long-term miso because it is aged longer (6 months to 1 year) to develop a sweet, earthy flavor and dark red color.
Miso Master Brown Rice Miso has been made in the USA for over 40 years. Our miso paste is unpasteurized, and made without additives or accelerants like yeast or alcohol. We use traditional aging methods allowing our miso to age naturally in wooden barrels for 12 months*.
