Brown rice miso paste (Genmai miso) is a traditional type of miso paste made from soybeans and brown rice koji. The difference between Brown Rice Miso and other miso paste varieties is the use of brown rice instead of white rice. Brown rice miso is considered a long-term miso because it is aged longer (6 months to 1 year) to develop a sweet, earthy flavor and dark red color.

- Fermented Naturally: Our Brown Rice Miso is naturally aged in wooden barrels for one year * without the use of high-heat (destroys beneficial bacteria), accelerants (artificially speeds up fermentation), or yeast (alters flavor).
- Unpasteurized: Miso Master Brown Rice Miso is traditionally fermented inside wooden barrels in accordance with traditional practices
- Color & Flavor: Brown Rice Miso paste is dark reddish-brown in color with a nutty, slightly sweet, earthy, savory flavor.

Brown Rice Miso should be refrigerated upon receipt to maintain quality, taste, and the color of our Brown Rice Miso paste. When refrigerated Brown Rice Miso is good for about 18 months.
