- Yield: 1 Quart 1x
- 1–1½ cups Miso Master Organic Traditional Red Miso
- 1 cup soy sauce
- 1–1½ cups packed brown sugar
- 1 cup dry vermouth
- 1 Tbsp finely grated fresh ginger
- 2 large cloves garlic, minced
- Mix all ingredients until well blended.
- Marinate chicken or pork for up to 12 hours.
- Brush on fish 2-4 hours before cooking.
Marinade is sufficient for 5 pounds of chicken, pork, or fish.
For a sauce, dilute 2 parts marinade with 1 part water, stock or vermouth.
